Cedar Planked Chicken Bruschetta

Cedar Planked Chicken Bruschetta

227g/8oz container of Bruschetta
   - (you can make Bruschetta yourself by mixing chopped Tomatoes,
     chopped Onions, crushed Garlic, dried Oregano, dried Basil and a 
     little bit of Olive Oil)
1-Boneless Skinless Chicken Breast 
1-Submarine Roll (about 12 inches)
1/2 cup of Butter
2-Cloves of Crushed Garlic (you can use Garlic Powder if you prefer)
1-Tablespoon of Dried Oregano
1-Cup of shredded Cheddar Cheese 
   - (enough to cover both halves of the Submarine Roll)
BBQ seasoning
1-Cedar Plank (pre-soak by submerging in water for a minimum of 4 hours)
   - Cedar Planks are found in the Fish Dept. of your local Grocery Store
   - DO NOT use wood from a lumber store as it may be treated with
     chemicals

Instructions:

  • Season both sides of Chicken Breast with your favourite BBQ Seasoning and lightly coat with Olive Oil (always wash your hands after touching raw chicken)
  • Grill Chicken Breast
  • Chop Chicken Breast into 2 cm (roughly) cubes and mix together with Bruschetta
  • Cut Submarine Roll in half length ways
  • Mix butter with dried Oregano, and crushed Garlic
  • Spread Garlic Butter mixture on both halves of the Submarine Roll and lightly toast on grill
  • Remove lightly toasted Roll from grill and cover both halves with Chicken Bruschetta mixture
  • Cover both halves with shredded Cheddar Cheese (Cheese can be sliced if you prefer) and place on pre-soaked Cedar Plank 
  • Place Cedar Plank directly on Grill (mid-high heat) and close lid to allow the smoke from the Cedar Plank to infuse the Chicken Bruschetta for roughly 20 – 25 minutes depending on your Grill
  • Occasionally, lift the lid briefly (you don’t want too much of the smoke to escape) to check that the Plank isn’t on fire - have a spray bottle filled with water ready to spray on the Plank if it catches on fire
Remove Chicken Bruschetta from Cedar Plank, place on serving platter and cut into 2 inch wide pieces OR you can also serve right off of the Cedar Plank - simply remove Cedar Plank with Chicken Bruschetta from the Grill (use oven mitts) and place on a hot plate (it’s very hot coming off the Grill and it will burn your table) then cut into 2 inch wide pieces and serve right on the Cedar Plank.  ENJOY!
